The flexibility of the frittata!



Saturday morning is a sacred time in the Cameron household.  It is one of the only mornings (anytime for that matter) a week that we are both home with Aubrey. Come to think of it Saturday morning breakfasts have always been a staple in our routine; even before Jeff and I were married we'd go to each others houses for breakfast before Jeff would go to work. So glad to see this has become a tradition for us!

What to make? Nothing in the fridge but some odds and ends? A bit of pepper, half an onion, spinach to use, asparagus, mushrooms, cooked chicken, ham, bacon, chopped tomatoes ....the options are endless.  The frittata is the perfect way to start free-styling in the kitchen.
Turn oven to 375 convection.  Using a cast iron pan (any pan that can go in the   oven) you sauté all of your 'garnish' as Jeff refers to it and then whisk 5-7 eggs (depending how deep you want to make it) in a separate bowl season with salt, pepper and herbs of choice.  *Note: to make it lower fat, use a few whole eggs and the rest just the whites or even add a little milk or half and half to make your eggs go further! 


Make sure the pan is at medium high heat before you pour the egg mix in. Leave for two to three minutes just until you see some of the eggs set and then grate some cheese on top (optional) and put it in the oven for 10-15 minutes. 

You'll know by the touch; it should be firm with a little bit of spring.

Let it rest for a few minutes then serve; this can accompany many things....even make it for a brunch, lunch or supper with a side salad.  Make this over and over; and you never have to make it the same way twice! 


These mornings have and will continue to be such precious memories!  Even if we don't have a lot of time together we sure try to make the most of the time we do get...for our house the kitchen is the perfect place to do that.
