Pumpkin soup (forgot to post!)

So with Halloween past we were wondering what to make with the two pumpkins we had boughten for our doorstep?
We cut them through the middle, removed the seeds and filled them with sliced garlic, herbs and a drizzle of olive oil.
We put the tops back on them so the flesh would steam.
This is what the pumpkins looked like after an hour of roasting at 375F.
We left them for about a half an hour and they continued to cook.
Since we planned on making soup with the roasted pumpkin, Aubrey and I decided to make biscuits. Jeff requested his moms recipe so we made a quick call and then Aubrey and I got started on the biscuits.
They were very good biscuits; they baked up and ended up having so many layers!

Aubrey took the leftover dough and played with it for over an hour. We should do that more often!
The soup we ended up making was vegan and gluten free. We sautéed onions and then added the pumpkin, Coconut milk, water and salt and pepper for seasoning. We puréed this after it cooked for a while. It was so silky smooth and the coconut paired so nicely with the pumpkin purée. 
Enough to share.
I decided to sautée some shrimp with chili oil on high heat. This was so delicious and was amazing in the soup.

"Peanut butter love" Pinterest recipe review

It's not very often that I get sick of chocolate chip cookies but with peanut butter on sale at superstore I figured it was time to deviate from the regular chocolate chip cookie and make a slightly chewy peanut butter cookie, yum!  For some reason I couldn't find my recipe so I decided to search Pinterest and give one a try.
I have to say this was a snap to whip up while the kids were eating dinner.
The hardest part of the process was waiting for them to bake so I could try one!
I would highly recommend this recipe they would so peanut butter-riffic and they baked up so nicely. I used a scoop and they looked identical, almost store-bought like
We made a double batch so we'd have enough to share. Aubrey and I thought packaging them up would make them taste enough better.
It was fun to hand out the "peanut butter love"!
Speaking of Pinterest; I made this from Pinterest inspiration with the assistance of my friend Quinn.
This string-nail art was so much fun. The hardest part was nailing in the nails over the template. The string part of the project was almost like a fun riddle. I highly recommend this craft; perfect for a girls night in or even a date night ...I think my husband would find this totally fun.

Leftover meat sauce; lasagnas

We are thoroughly enjoying the fall season. We checked out shelmardines hay maze over the weekend and will definitely  make it a yearly thing.
After thanksgiving and then Halloween treats I was in much need to eat a few salads. Here was one of my favourites; basically putting a fried egg on anything is a good idea!
So my lasagna making all started when my mom offered me two containers of homemade meat sauce. I first doubled the sauce by adding two cans of plain tomato all purpose sauce. To this I added salt, pepper and Italian seasoning. Sauce done!
I mixed a tub of dry curd cottage cheese with three eggs, drained thawed frozen spinach, Italian seasoning, salt, pepper and chopped up Gorgonzola (only because I had it on hand).
I layered sauce, noodles, spinach mixture, noodles, sauce, noodles, spinach mixture, noodles, sauce, and then topped with grated mozerella cheese.

Since I used low fat cheese I drizzled a little chipotle olive oil on top for a little pizazz!
Since everything was cold I just layered everything and covered the dishes and got them straight to the freezer. I have to say lasagna is way easier to assemble when everything is cold or room temperature. This made 3 lasagnas.
Since that took no time at all I decided to whip up three batches of banana muffins. Since Liam wouldn't let me put him down this recipe was made with my left hand; hopefully we don't find eggshells!
Finally he got down but only after I offered him a measuring cup with 10 chocolate chips in it. Gotta choose your battles!
