Apple oat and carrot muffins

So I wanted to make muffins that were different than the regular banana muffin. I found this recipe on Pinterest. 
Aubrey asked if she could be incharge of the muffins...why not?! She pulled up a stool and got to work!
She grated the apple and carrots.
Liam was the supervisor.
Fresh ginger...
We mixed the dry ingredients together and the wet ingredients together separately. 
Now she's mixing everything together...oops almost forgot the sugar! 
We baked these at 375F for 20minutes. 
They turned out perfectly; moist but still  had an nice chew to them from the oats.
Meanwhile; my sister and I were discussing dinner.  What do you do when you have chicken breast and salad for dinner but you don't feel like eating chicken breast  and salad for dinner? You roll out pizza dough, use the salad dressing packet as the sauce, top with the coleslaw style salad, then add the sautéed chicken and cheese. Bake, while hoping for the best!
This was a pleasant surprise; it turned out like an Asian style chicken pizza!
