Banana loaf in bulk!

So this is what most mornings look like; coffee in hand and Liam on my lap...ya I'll take that!
So it's not often that I deviate from my regular no-fail banana muffin recipe but I had so many frozen (very ripe) bananas and cute loaf pans to give away. When I saw this recipe I thought I'd give it a try.
I doubled this recipe; which made 5 loaves.
My friend Cathy gave me these paper non-stick loaf pans from superstore. These worked great. I will definitely  look to buy these again in the future; they come with a plastic bag and ribbon for each loaf pan. 
Using the paddle attachment I creamed the butter (half oil and half butter...I ran out of butter) and sugar together ( I cut the sugar in half*) adding in the eggs and mixing until light in colour.
I mixed in the bananas and then squeezed in the juice of one lemon.
I then added in all of my dry ingredients; gently turning on my mixer trying not to have things explode all over me and my kitchen!
Lastly I mixed in the Greek yogurt (I used this instead of sour cream).
I bake these at 350F for 90 minutes as directed.
Like seriously; these were amazing. The texture was perfect and the flavour was so tasty. I am VERY glad I cut the sugar in half; but other than that this recipe is great. Maybe there is a difference between loaf recipes and muffin recipes? This is a keeper!
The kids couldn't get enough of the banana bread; with 1/3 of a loaf left on the counter; the rest has been either been given away or devoured. I think it was a winner!
