Fixing of the wedding cupcakes....recipes

A friend brought it to my attention that I didn't have the cupcakes recipes on my wedding cupcake blog. I thought that I had previously posted them but in looking back I noticed that they were only renditions of the original beloved cupcake.
So here it is the "original"!!!!

Cupcake batter recipe;

2cups white sugar
1 3/4 cup ap flour
3/4cup cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
Mix well
Add in 
2 eggs
1cup milk
1/2 cup oil
2 tsp vanilla
Gently mix in 1 cup boiling water watching not to splash your self! Mix well!

Set aside.

Cheesecake filling
8 oz cream cheese, softened
1/3 cup granulated sugar
1 egg
Dash of salt
Chocolate chips (I eye ball it)
Mix well; will be loose.

Preheat oven to 350F
To assemble:
Put cupcake liners in the muffin tins
Pour a little batter in the bottom
A generous tablespoon of filling
Then pour more batter on top 
These should be 3/4 full.
Bake for 20-25 minutes

Cool completely before icing!


Pipeable icing:
2-8 oz cream cheese at room temperature
1/2 cup unsalted butter at room temperature
2cups powdered sugar
1tsp vanilla

Beat well!

Pipe room temperature icing on the cupcakes; depending how high you'd like the icing you may need a double batch.

Refrigerate until they are chilled or for best results overnight!

This makes 24 cupcakes!
