Oatmeal pancakes...deliciously Gluten-free

This GF oatmeal pancake recipe was first  shared with us last October while visiting our very good friends; The Stamlers in ThunderBay Ontario.  

This simple delicious high protein recipe is great for children and parents alike.  I'm not a huge pancake fan; I usually feel stuffed...then hungry a half hour later.  These feel like a complete breakfast and the protein allows you to stay full longer!


In your food processor you blitz 2 cups of oats(GF)
You want it to be like whole wheat flour texture.
To this you add 2cups of cottage cheese and blitz.
Then add the 4 eggs, vanilla, cinnamon, salt, something sweet (i used agave) and blitz.

Toppings: 
Greek yogurt, berries and maple syrup our are favourite toppings!

We also have thought of making these savoury by adding less sweet and omitting the cinnamon. Making them bite size and topping them  with smoked salmon, creme fraiche, and a sprig of dill would sure impress as an appetizer! Mmm I could go for that right now!!!!
